Easy and Simple Mexican Beef & Butternut Squash

A nice combination of spicy and sweet makes this dish work. It's a Mexican-ish flavor.

Base

  • 1 butternut squash, cubed.
  • 1/2 lb beef

Flavor

  • ​1/2 t. Chilli powder
  • 1/2 t. Cumin

Steps

  1. Cut the butternut squash down the middle, remove seeds and peel. Cut into cubes. 
  2. Roast the butternut squash either in the oven at 400F for 25 min. or braise it in a pan on the stovetop over medium heat until tender ~15 min. 
  3. Brown the meat in a separate pan, add seasoning. 
  4. Mix butternut squash and beef together, serve it up.

Variations

PAPRIKA & CUMIN
For a twist on seasoning, replace Chilli powder with paprika.
CARAMELIZED Onions
​Dice up 1 onion and fry in a pan for a few minutes. Add beef, cook until brown. Then add rest of flavor.
